Snacks are very variable, including potato chips, flips, roasted nuts, crackers, pretzel sticks and also sweets. They offer flavors that can be sweet, sour, bitter, salty, savory, metallic and spicy. And just as the taste properties are different, the visual properties of snacks are also different.
The surface of the samples is usually uneven, sometimes speckled with salt or spices and can rarely be measured at specific points. The measurement techniques vary depending on the type of snack, which usually includes coarse-grained, inhomogeneous and irregularly shaped food products.
For snack food, it is important to ensure that the instrument has a large observation area, so that the sample can easily be placed under the sensor in sample plates of different sizes or in a Petri dish.
Using nuts as an example, the samples are handled like bulk goods and removed from the batch in large sample plates, then placed under the Aero's sensor and measured. It is important to ensure that the bottom of the plate is always completely covered.
The measuring head of the Aeros can be adjusted horizontally and thus positioned eccentrically over the edge of a sample dish or sample plate. For the measurement, the bowl/plate rotates under the sensor while the device takes 35 measurements in 5 seconds and calculates the average value.
The ideal height of the sensor above the sample is ensured by IR distance measurement and thus ensures exact color measurement. The sample then rotates under the eccentrically positioned sensor. During the rotation, several measurements are carried out one after the other and the average value is automatically calculated. Due to the unusually large measuring surface that is scanned, the overall color of the food can be reproduced very precisely.
A comparison with intermediate measurements without a measuring flash guarantees that the measurement is insensitive to the existing ambient light.
Since this non-contact measuring method is very user-friendly and the measurement results are extremely accurate and repeatable, this method is recommended for measuring nuts, flips, chips or other snacks.
